How to Build a Simple Greek Pantry Mezze

Build a simple Greek pantry mezze around one olive dish, a plain accompaniment and one or two contrasts. A bowl of olives, bread, a vegetable dish and a separate cheese plate can make an inviting selection without filling the table with competing spreads.

Choose the olive centrepiece
Whole olives offer individual bites; an olive spread needs bread, a spreading utensil and a separate dish. Decide which experience you want before adding both automatically. If using whole olives, give guests an obvious place for pits. For a bowl with more flavour, try marinated olives, or mix varieties from our Greek olive types guide.
The Kalamata and black olives guide helps with ingredient names. For a spread, follow the attributed tapenade recipe rather than improvising a large batch for storage.
Add contrast
Plain bread gives a spread somewhere to go and lets the olives stand out. A shallow dish of herb dipping oil for bread is another easy option. A prepared vegetable dish, such as gigantes plaki or Cretan dakos, can offer a different texture; a cheese you enjoy adds another flavour. Choose the components for the occasion: a few tastes before dinner need less food than a mezze-style shared lunch.
Check the olive’s packing ingredients before adding more herbs or dressing. The International Olive Council explains that table olives come in different preparations. A strongly seasoned olive bowl may already provide the herbal accent the meal needs.
Keep sharing comfortable
Put spreads, honey and dressings in separate dishes with their own utensils. Leave room for guests to set down a plate and reach the bread without stretching over everything. Keep ingredient information available, and follow each component’s handling guidance rather than treating the whole board as one food. Good spreads to add are melitzanosalata, taramasalata and tirokafteri.
Explore the Kalamata olives collection for the pantry ingredient. If two dishes serve the same role, leave one out and give the remaining choices enough space.
